Every once in I have to haul off and make a big batch of enchiladas even though I never think to order green chiles from New Mexico ahead of time. I've found tomatillo salsa makes and OK substitute. I puree some of it and use that to dip corn tortillas in before rolling them up with cheese and onions and sauteed chicken breast. I should have taken a photo because they were very pretty. And you can put anything you want to inside them--meat, shrimp, beans. I mean I guess I would not want certain things in my enchiladas like smoked salmon or cranberries or brie or something.
So now I miss Santa Fe and also math. I miss doing math even if I am sort of lousy at it. I miss the bright yellow license plates and the mountains and the sage brush and pinon and the enormous and deeply blue sky.
But we have made the change over from flannel sheets to percale. The worm has turned. Perhaps my luck will too and I'll actually get something accepted somewhere, sometime. One poor, stupid story is in something like it's 38th incarnation. If I can't get someone to take it off my hands by the end of the year I shall put a kindly bullet between its eyes and wipe my hard drive.
