My new candy thermometer came today and I was excited to try it out so I boiled water and tested it. It registered at exactly 212 degrees. So I made another batch of caramel. Which turned out burned and nasty. I think I didn't have the probe part of the thermometer submerged enough. So I pitched that batch and started over. I made a beautiful batch of caramels, but they aren't all that soft. They are the glue your jaws together kind of caramel that I should not be eating with braces. I already tempted fate once so I won't eat another one.
And I knew I was cooking them to the hard crack stage so I don't know why it didn't register sooner that these would be super chewy and firm. *facepalm*
What I wanted to make were soft caramels that I could cover in chocolate. My first batch came out somewhat soft because my candy thermometer wasn't calibrated properly. So I'll have to try a new recipe, but I think two batches of caramel is enough for tonight.
I made it through my mapping out process with the last 9 chapters of the novel. My attack plan is still a bit hazy, but I am hoping it will firm up in the morning. I want to be done with the draft on Sunday.
We bought our plane tickets for Thanksgiving and I have no idea if my brother will be there or not. I don't even know what to hope for at this point. :/
