I roasted two chickens, made a pumpkin pie, mashed potatoes (that were pink because the potatoes were pink inside), stuffing, sweet potatoes, green beans, and popovers. It was a mini Thanksgiving with friends. I think all worked out OK although I was loopy on lack of sleep. There is an ambien in my immediate future. And a plane ride to Virginia in the morning.

that sounds like a GREAT meal. I had pumpkin enchiladas and salad for dinner tonight, and the girls had both pumpkin enchiladas and some of the pizza pasta left over from yesterday. So much tasty...!

WOW! That is quite a feast. May I ask for your roast chicken recipe?

Sure. I take a whole chicken (remove the little sack of organs obviously) and stuff the cavity with cut lemon wedges, fresh branches of rosemary and thyme. Smear the outside with butter and herbs, salt, and pepper and roast in a 400 oven til a thermometer in the thigh reads 170 (or 20 minutes per pound).

I adore roast chikkin.

As an English-South-Africa-Scot, I've never had pumpkin pie. Is it savoury or sweet?

It's sweet. It's got ginger and cinnamon in it. With homemade whipped cream it is delightful.

Hmmm..... so your pastry for the pie is sweet too?

In South Africa, some of the Afrikaners make a dish using butternut, which is a kind of sweet squash, with butter and cinnamon, and roasting it. Nomnomnom!
